Super Simple Suppers for When You Are Not Sure What to Make

Super Simple Suppers - Smoothie

My kids insisting on eating multiple times every. single. day.

Yours too?

I’m not going to lie. Sometimes I (half-jokingly) suggest that everybody fast for a meal. My kids never go for that.

Enter the smoothie.

Smoothies for Supper

Smoothies in my house normally show up for supper on Saturday evening. I’m tired. I usually do most of my office-work on Saturday, so I’ve been busy writing and preparing for another week as a Holistic Health Coach. I haven’t been thinking about what I’m going to make for supper.

{Sidenote: this is much better when I actually plan meals for the week. Over the summer, I was pretty horrible about meal planning.}

I love to fit an entire meal into a smoothie! I get fruit, veggies, protein, and healthy fats in there. Best of all, most of my kids usually drink the whole thing quite happily. Unless I add chia seeds. My kids revolt if they think there are chia seeds. I love the tasteless little seeds packed with healthy fats, protein, and fiber; my kids hate them.

Sometimes, my smoothie presentation is beautiful. Do you want to know why? It’s because I was too lazy to pull out the big blender. So I used the Ninja blender and did one layer at a time. The boys stir theirs with a straw so they don’t take a chance on tasting the green layer.

But I often get stuck in a smoothie rut. My smoothies end up all tasting similar.

Superfoods and 130 Recipes

This is why I was thrilled to read Simple Superfood Smoothies by Sondi Bruner. I was intrigued by the “superfood” and drawn in by the promise of “130 superfood smoothies—made super easy.”

I appreciated the intros to each section. The author included enough information about each superfood without overwhelming those looking for recipes. Also, I very much appreciated the factual information without a lot of hype. As an RN and Holistic Health Coach, I’m very leery of too-good-to-be-true claims and am happy to report that this book doesn’t have any. It speaks the truth, imparts simple tips, and provides fabulous recipes.

Supper (Dinner) for Them + Breakfast for Me

My kids (ages 5 – 12) and husband are all thankful for more variety in our Saturday smoothies. And I love the increased variety in my breakfasts.

Yes, I have a smoothie every single morning for breakfast. As a busy homeschooling mom, I need something super fast and healthy—something that will provide energy for the morning without a sugar crash. I also need something I don’t have to chew. I’m just not awake enough at breakfast for all that work of chewing! You can bet that I take advantage of some cooled tea in some of my breakfast smoothies! Caffeine, superfoods, and energy for the day? Yes, please! You can read more about my thoughts on breakfast here.
